Does anyone have any suggestions for "on the go" dinners that a person can eat on Wednesday nights? As in...REAL food, not fast food?
I work until 5:00 pm. Then, we really need to be back at the church by 6:00 to get ready for the Wednesday night programs. Not really enough time to run back home to make dinner and get back on time...especially now, with the "one car" situation!
For the past 5 years, I've been involved with churches that did a Wednesday night meal (either Alpha course or community outreach), and that wasn't even a thought. But now...we are getting SICK of fast food. And it's really not the best choice, anyway!
I'm in the same boat. If you find something, please be sure and post it. If I never eat another fast food burger, it will be to soon. I mean really how much fast food can a body handle without rebeling. Take that back, I guess my body is being rebellious. I have gained 50+ pounds since we began pastoring that was only 1 1/2 years ago.

Dump all ingredients into pot except for biscuits. Bring up to boil then cut heat back to slow to moderate bubble. Make sure to stir together well, should be somewhat thickened. Tear each peice of biscuit dough into 2 pieces and drop into bubbling soup. Stir carefully, it can burn easily if not stirred or if flame is too high. Cooks in about 15 min. from start to finish and it has more nutrtional value than fast food.

Go to www.cookingcache.com and look at the oodles of recipes for your crockpot. A must have for working outside the home or busy ministry schedule. Flylady.net has several on her site too but I like the other website the best. And almost everyone I have tried has been great. Hope that helps.
I do not even know how you go home and get ready and eat within that time frame. I'm surprised your pastor has you there until 5 pm on Wed., although that is his/her prerogative and I'm not saying anything negative about it...I just know it makes it hard. We have our staff go home a bit early on Wed., so they can eat, and "get ready" to come to church again. I know as for me I normally sometimes shower again (remember, we are in FL!) and 9 times out of 10 I will re-shower and change clothes, eat, get ready again (hair/make up), get the kids ready and get to worship rehearsal at 6 pm. Then church is at 7 pm.
Normally on Wed. nights unless I would get home unusually early we do not really cook dinner of sorts. As for me personally on Wed. night I normally have a lean cuisine. My dh eats leftovers. For the kids, my boys leave straight from school at 2:30 and go to the church. They have band practice and they always help the youth pastor get ready for the service. They eat at the church cafe, which serves pizza and hotdogs and stuff like that. If by some chance they would come home first, they eat a sandwich, cereal, or leftovers. Savanna most always eats cereal when she comes home on Wed. night and then she eats again at the cafe.
It is just too much stress to cook a meal on Wed. night. Sometimes I work straight through and don't come home at all on Wed. night if there is a very busy day. My dh will come home to freshen up, get Savanna from school and come back to the church. If I stay and work all day up to the evening service, I run a few blocks down to Subway and get a sandwich (healthiest place to eat "fast food") and eat at my desk, and then freshen up for church in my office. (I'm so blessed to have a full bathroom, shower, etc. in my office where I can get ready for church all over again in there just like I would at home.)
I would not even try to cook on Wed. nights, it's just too much. But I understand wanting to eat healthier. Having lost weight and gotten into shape I realize the challenge of Wed. nights that you are facing. I normally also have my snacks with me such as low fat cereal bars, 2% cheese with lite crackers, fat free pudding, fresh fruit, etc. In fact, in addition to whatever quick thing I ate for dinner on Wed., I always have something in my purse for after church such as an apple, a cereal bar, etc. because after Wed. night church I always have a meeting and do not get home until about 10-10:30 pm. During the school year, my husband takes the kids home at 9, and gets them settled and I come home later. (Our service ends at 8:30.) Wed. is a very long day for me and although God always does miraculous things, I can't wait to get home afterwards and get to bed.
Well, I took a long time to answer your question. But just to let you know, I understand the Wed. night challenge, and the need to be healthy while managing the crazy Wed. schedule.
This is only temporary...until we are able to get a second car! We are absolutely allowed to leave a couple of hours early if we have a meeting or service in the evening...but right now I'm stuck because DH does not get off work until between 4:00 and 5:00 (they have staggered shifts at his bank!).
